The story of Mysore Pak: from palace kitchen to sweet shop

Mysore Pak was created in the royal kitchen of the Mysore Palace in the early 20th century, during the reign of Maharaja Krishnaraja Wodeyar. Palace cook Kakasura Madappa made it from just three ingredients: gram flour, ghee and sugar. Many accounts date it to around 1935, which makes the sweet roughly 90 years old.

How the sweet got its name

The popular story goes like this. One evening the king's dessert plate was empty, so Madappa heated ghee, gram flour and sugar into a thick syrup and served it warm, as retold by IIT TechNews. When the Maharaja asked its name, Madappa said the first thing that came to mind: Mysore Paka. In Kannada, paka refers to sugar syrup.

The king liked it so much that he wanted his subjects to enjoy it too. He asked Madappa to sell it outside the palace walls, and Madappa's family still runs a sweet shop in the city, according to Outlook Traveller.

Why Mysuru is still its home

Mysore Pak spread across South India over the decades, and Tamil Nadu has its own famous version, often spelled Mysurpa. Yet the original sweet, its name and its royal story all belong to Mysuru. That is why so many visitors make a Mysore Pak stop part of their trip, and some guided city tours now include a tasting at World of Mysore Pak alongside the palace and Chamundi Hills.

Why it belongs on a sweet lover's itinerary

World of Mysore Pak is built for people who want more than a box off a shelf. It is a dedicated Mysore Pak store with an experience centre, run by three women co-founders who make every batch with pure ghee and traditional recipes, and it sits right on the route most Mysuru visitors already take.

A store built around one sweet

Most sweet shops sell Mysore Pak as one item among dozens. Here it is the whole point. Co-founder Sowmya Pavan Bargi has described it as the world's biggest Mysore Pak experience store, in a feature first published by Condé Nast Traveller and shared by travel writer Bindu Gopal Rao, which also reported the store selling more than 100 kg of Mysore Pak a day.

"Our journey began with a passion for preserving the rich heritage of Mysore Pak," says Sowmya, who runs quality and operations. Co-founders Sushma V Prasad and Shruthi Pavan Shroff lead traditional sweet-making and brand strategy, making World of Mysore Pak a women-owned venture. Read more in our story.

What you can do at the store

  • Taste before you buy: try different textures and flavours side by side to find your favourite.
  • Learn the craft: every batch follows four steps, sugar syrup, then besan, then pure ghee, then setting and cutting.
  • Shop sweets and savouries: pick up other traditional Karnataka sweets and snacks with your Mysore Pak.
  • Pack gifts for home: choose gift boxes and festive tins for family, friends and colleagues.

Right on the way to Chamundi Hills

The store sits on Chamundi Hill Road, which pilgrims use to reach the Chamundeshwari Temple, so it gets busiest during holidays and festivals. Plan your visit on the way down from the hill, when you have time to taste and shop without rushing.

Mysore Pak varieties every sweet lover should try

Mysore Pak comes in two main textures: the classic porous, slightly crumbly kind and the soft ghee kind that melts on your tongue. Milk Mysore Pak and flavoured versions give you more to explore. Taste at least one of each texture before you decide what to carry home.

StyleTextureWhy try it
Classic Mysore PakFirm, porous, crumblyClosest to the original palace sweet
Ghee Mysore PakSoft, rich, melts in the mouthFor anyone who loves a buttery bite
Milk Mysore PakDense, milky, fudge-likeA gentler sweetness, good for children
Flavoured Mysore PakVaries by recipeTwists like cashew, almond, carrot or jaggery

Classic Mysore Pak

The original style has tiny holes running through it, like a honeycomb. They form as moisture from the sugar syrup escapes as steam through the gram flour while it cooks. The result is firm outside with a gentle crumble inside.

Ghee Mysore Pak

Ghee Mysore Pak uses more ghee and comes off the heat earlier. It is soft, glossy and very rich, and it is the version most people outside Karnataka know. Eat it slowly and let it melt.

Milk Mysore Pak and flavoured versions

Milk Mysore Pak adds milk solids for a softer, fudge-like bite. Flavoured versions mix in nuts, fruit, jaggery or other twists while keeping the gram flour base.

A half-day sweet trail in Mysuru

The simplest sweet lover's plan is a morning on Chamundi Hills, a Mysore Pak tasting on the way down, and an afternoon at the palace and Devaraja Market. It takes about five hours and covers the city's royal story from temple to kitchen to bazaar.

  1. 7:30 AM, Chamundi Hills: start early at the Chamundeshwari Temple, before the crowds. Fit walkers can climb the famous steps instead of driving.
  2. 9:30 AM, World of Mysore Pak: stop on your way down. Taste the Special and Traditional Mysore Pak side by side, then shop for gifts.
  3. 11:00 AM, Mysore Palace: see the palace where Mysore Pak was born, and picture the royal kitchen where Madappa made the first batch.
  4. 12:30 PM, Devaraja Market: walk the old market for flowers, spices and more sweet shops.
  5. 1:30 PM, lunch: end with a traditional Mysuru meal before heading back.

Keep your boxes out of direct sun in the car. Ghee-rich sweets soften quickly in the afternoon heat.

Buying, packing and gifting

Buy on the last day of your trip if you can, keep boxes sealed and away from heat, and eat within the shelf life printed on the pack.

  • Keep it cool: heat softens the ghee and changes the texture, so never leave boxes in a parked car.
  • Keep it sealed: open one box at a time and close it tightly after each serving.
  • Pack it flat: carry boxes upright in hand luggage so the pieces do not break.

Mysore Pak is one of the most popular sweets to bring back from Mysuru. Gift boxes and festive tins work well for Deepavali, weddings, housewarmings and office teams, and a mixed box is a safe choice if you are unsure which texture someone prefers.
